Harissa and Chickpea Cauliflower Stew

Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons Harissa (found in store or online here)
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 small head cauliflower, cut into bite-sized pieces
- 1 cup vegetable broth
- 1/4 cup chopped fresh cilantro
- Salt, to taste
Instructions:
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes. Stir in the Harissa, diced tomatoes, chickpeas, cauliflower, and vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.
Stir in the cilantro and salt. Serve hot, garnished with additional cilantro if desired.
