Ebling Sekt Non-Vintage
Elbling is one of Europe's oldest grape varieties — records stretch back to the Roman Empire — and today it survives almost exclusively along Germany's upper Mosel, where it competes (poorly, commercially) with Riesling but produces extraordinarily light, vivid sparkling wine. Weingut Hild bottles it as a Sekt: méthode traditionnelle, with crisp apple, citrus zest, and a mineral clarity that makes it ideal as an apéritif or alongside oysters. Historically significant, practically priced, and genuinely delicious. There's a reason the Romans planted this grape along the river.
